Whether you're a country or city girl, environmental hazards are everywhere, wreaking havoc to your skin an overall health. These pollutants can cause asthma, respiratory problems and cancer. Be proactive about protecting your body - remember, it's your one and only - by chowing down on this fresh and light antioxidant salad. Antioxidants have been found to protect your cells from the mutations that cause severe illness, such as cancer.
To make this tasty summer treat, you'll need:
2 cups chopped kale
2 cups fresh baby spinach
1 cup chopped broccoli florets
1/2 cup chopped Vidalia onion
1 cup chopped celery
1 cup chopped carrots
2 cups fresh chopped apple, lightly coated with lemon juice
1/2 cup raisins
1/2 cup cranberries
1 cup sweet cherries (pitted and halved)
1 cup seasoned croutons
1/2 cup seasoned rice vinegar.
Mix all your veggies and fruits together in a large bowl, then toss lightly in the rice vinegar until coated. Nothing could be simpler!
This recipe will yield four servings.
Tip: If you won't be serving right away, keep the apples and cherries in a sealed plastic bag or container in the refrigerator, to prevent oxidization.
