The fall season involves many fun activities revolving around food, from apple picking to collecting Halloween candy, which can make ladies' body detox efforts seem nearly impossible to maintain. However, Shape Magazine recently suggested a few healthy recipes featuring the season's favorite treat - pumpkin. The following is an easy pumpkin delight.
Pumpkin brownies
Ingredients:
1/2 c. spelt flour
1 tsp. cinnamon
1/4 tsp. pumpkin pie spice
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
5 tbsp. brown sugar
1/2 c. canned pumpkin (or cooked, pureed pumpkin)
2 tbsp. nondairy milk
2 tbsp. coconut oil
1/2 tsp. pure vanilla extract
Blend the dry and wet ingredients separately. After each category is mixed, combine them together and spread the batter into an oiled pan. Cook for 20 minutes at 350 degree heat. Add cream cheese icing if desired.
