RECIPE: AVACADO & TOMATO GAZPACHO

Chef Monica Rios recently opened the Green Table Artisan Kitchen & Bistro in Coral Gables, Florida featuring a selection of deliciously handcrafted New- American cuisine dishes that promises delicious food from organically grown local produce. More than a restaurant, Green Table Artisan Kitchen and Bistro seeks to promote sustainable cuisine without compromising on taste.

Gazpacho is a classic Andalusian meal made with raw vegetables and is bursting with nutrition. This particular Gazpacho uses Avocado and Spinach making it a refreshingly healthy option for a summer lunch.

Instructions: Mix all ingredients except the olive oil in a blender. If it does not become creamy in its consistency, add a little water. Then mix in the olive oil. Refrigerate and serve with chopped avocados and tomatoes as a garnish on top. 


Ingredients:

7 plum tomatoes (seeded)

1 avocado (hass avocado or ½ Florida avocado)

½ yellow onion

½ red bell pepper

½ cucumber (seeded)

1 handful of spinach

1 small clove of garlic

Juice of 1 lemon

½ cup of water

¼ cup extra-virgin olive oil

 

For Garnish:

1 tsp chopped Italian parsley

1 tbsp diced avocado

1 tbsp diced tomato
