RECIPE: DETOX VEGGIE BURGER

More than a restaurant, Green Table Artisan Kitchen and Bistro seeks to promote sustainable cuisine without compromising on taste.

Bring water to a boil in a small saucepan. Add quinoa and return to a boil. Reduce to a low simmer, cover and cook until the water has been absorbed, about 10 minutes. Uncover and let stand. Heat 1 tablespoon vegetable oil in a medium skillet over medium heat. Add cup onion and garlic and cook, stirring occasionally, until soft and fragrant, about 3 minutes. Add beans, paprika and ground cumin and mash the beans to a smooth paste with a fork. Transfer the mixture to a bowl and let cool slightly. Add the quinoa, cilantro, 1/2-teaspoon salt and pepper; stir to combine. Form the bean mash into 4 patties and transfer to a baking sheet. Refrigerate for 30 minutes.


Guacamole: Mash avocado with a fork. Stir in cilantro, jalapeño, lemon juice, and salt

Side Salad: cut carrot and radishes in sticks, drizzle with olive oil, lemon juice, salt and pepper

Heat 1 tablespoon oil in a large cast-iron (or similar heavy) skillet over medium-high heat. Reduce heat to medium and cook the burgers until heated through

and brown and crisp on both sides (2 to 4 minutes per side). Serve the burgers with guacamole on top and side salad.

 

INGREDIENTS:

  • ¼ cup quinoa
  • ½ cup water
  • 1 tbsp vegetable oil
  • ¼ cup chopped red onion
  • 1 clove garlic, minced
  • 1½ cup black beans
  • (organic can beans work fine)
  • 2 tsp chopped cilantro
  • ½ tsp ground cumin
  • 1 tbsp vegetable oil
  • Guacamole
  • 1 hass avocado
  • 2 tbsp lemon juice
  • 1 tsp cilantro
  • Salt
  • 2 tsp jalapeño (if you want it
  • less spicy, remove seeds)
  • Side Salad
  • 1 carrot
  • 4 radishes
  • 1 tbsp of olive oil
  • 1 tsp lemon juice
